[ Easy adaptable peanut bar ]

Day 2 of the Sharp Sharp recipes I will be posting this week. This time spicy peanut bars. They are easy to make & adaptable to the fruits & nuts you have at home.

Sometimes I feel more like using cashew butter instead of peanut butter, so just use the same measurements.

Peanut dates bar with fruits & nuts

INGREDIENTS

  • 5 medjool dates
  • 75 gr peanutbutter
  • 1 tbsp of water
  • 25 gr pistachio nuts
  • 25 gr cashews nuts
  • 25 gr almonds
  • 25 gr grated coconut
  • 25 gr sunflowerseeds
  • 75 gr raisins
  • 25 gr goji berries
  • half of a red chili pepper

First chop the dates into small pieces & slice the chili pepper without the seeds into small pieces as well. Set aside.

Put a small pan on the fire on low heat, add in the dates, peanut butter, chili, coconut and water & stir together until mixed. Add in the rest of the ingredients & mix until everything is coated in peanut butter.

In a baking tin covered with paper, add the mixture & use a spatula to even everything out. Just make sure to press the ingredients good together so that they won’t fall apart. Leave in the fridge for 30 minutes or until set.

Optional add some grated coconut on top & if they aren’t spicy enough for your taste add a teaspoon of cayenne pepper or use the other half of the pepper. To store them, keep them in the fridge wrapped in paper, in an airtight container. Enjoy!
