[ Sunny summer flavour ]
I love plantains; they are so versatile & easy to use in a lot of dishes. The combination of the flavor of the plantain with the spice chili, coconut & the taste of ginger makes a very nice treat. And the good thing is they are gluten free!
When you buy plantains make sure to buy them brown, or buy them a week before making these pancakes.
So get ready to feel like you’re on a sunny beach in the Caribbean, underneath a palm tree in a hammock, snacking this tropical treat. Just pair this with a nice summer drink ^_^
Plantain pancakes
INGREDIENTS
- 1 red chili pepper
- 2 cloves of garlic
- 1 part of fresh ginger
- 2 plantains
- 1 egg
- 3 tbs of grated coconut
- Arachis oil or coconut oil for frying
- (sea)salt to personal taste
Start by finely chopping the chili pepper, ginger & garlic. Peel the plantains & add to the bowl with the chili, ginger & garlic. Then add the egg & grated coconut & a pinch of salt. Blend together using a hand mixer until you have a smooth mixture. If you don’t have a mixer, use a fork/spoon & mix it all together.
In a (cast iron) pan heat a layer of oil, prevent the oil from smoking (if it does smoke this means that you overheated the oil). Take a tablespoon of the mixture and start frying both sides & when ready leave the pancake to cool down on a paper towel to get ride of the excess oil.
Add some salt before serving the plantain pancakes & enjoy this lovely treat.
