[ First recipe ]

So here is my first recipe for this new blog. I wanted to start with a recipe really close to my heart. Because some of you may know already, I love food & cooking. And with this love, well you can gain quite a bit by just listening to it.

Yep, so like a lot of people every now and then I will try out a new diet or try to be better in controlling how much nice food I will eat. Hello & goodbye macarons.

This recipe is as well vegetarian & gluten free, but most of al it’s really low in carbs.

Tomato goat cheese zucchini pasta

INGREDIENTS

Serves 2

  • 2 zucchinis
  • 1 cup of tomatoes
  • 1/2 cup of sun-dried tomatoes
  • 1/2 cup of green olives
  • 2 red peppers
  • 1 cup of goat cheese
  • 2 cloves of garlic
  • 1 red chili pepper
  • 1 tbs of oregano
  • salt & pepper according to own personal taste
  • 1 tbs of olive oil

First chop the garlic & red chili pepper. Put the oil in the pan and start frying the garlic and chili pepper. Secondly add the chopped tomatoes, red peppers and stir until evenly baked. Then add the oregano & salt and pepper according personal taste. Put the fire lowest as possible and add the olives and sun-dried tomatoes

Leave this mixture for a few minutes and then in the meantime start crumbling the goat cheese. At the end, you can start slicing the zucchinis with a julienne peeler & make even strings, this will substitute normal pasta made from flower, which will bring down the carbs in this recipe. Just take the slices of zucchini & put them in a bowl of boiling hot water. Take them out directly. You don’t want the zucchini to become to soft and cooked, a little bite is still very nice & chewy.

Then start making the plates, first the zucchini, then the tomato mixture & add the crumbled goat cheese on top.
