[ Fresh salad with many flavours ]

This will be my last post of this year. I have been quit distracted with work and travels & writing to less recipes and posts on this blog. Well starting with new years resolutions, although I don’t really believe in them, I will post more on my blog in 2014, pinky promise  ^_^

So here is a super nice recipe with loads of veggies & flavors. Ever since I created this recipe, my boyfriend is longing for me to make this one again. So here is the recipe for all of you to understand why my boyfriend loves this one so much.

Broccoli pecorino Salad

INGREDIENTS

  • 500 gr broccoli
  • 500 gr tomatoes
  • 50 gr spring onions ( 3 pcs)
  • 50 gr pine nuts
  • 50 gr pecorino cheese
  • A handful of basil
  • 2 tbsp Olive oil
  • Salt & pepper

Start with the tomatoes, scoop out the pulp of the tomatoes, then slice them into small pieces. (The pulp you can use in the soup but for this recipe you don’t need it) Slice the broccoli into small pieces. Boil some water and quickly parboil (blanches) the broccoli, then let it dry on a towel. The broccoli needs to still have a bite & it will have a gorgeous green color.

Chop the spring onion in small pieces, add to the tomatoes, then add the broccoli, salt and pepper to taste & some olive oil. Mix these ingredients and in the mean time fry the pine nuts in a small pan and grind the pecorino.

Take a handful of basil, tear them into small pieces and add to the broccoli mixture. Add the pine nuts & the grated pecorino, mix for the last time & it’s ready to serve.
